Curry Bowl
Recipes > Main MealsThis is a great side dish to a protein such as a steak, chicken or fish. Otherwise add a tin of fish to one serve for a terrific, tasty and filling lunch the next day.
Serves – 4
Ingredients
- 400gm can chopped tomatoes with herbs
- 400gm can chickpeas, drained
- 400gm can Four-Bean mix, drained
- 600ml vegetable stock
- 400gm green beans
- 1 tbspn Rogan Josh curry paste or similar
Method
- Put all ingredients in a large saucepan and bring to boil. Reduce heat and simmer for 15 minutes.
- Blend half the mixture in a food processor and return to the pan and reheat. Keep the other half in the saucepan for a chunkier version or blend the second half for a smoother version.
Serve on zucchini noodles or cauliflower rice
