Lemon Cheesecake

This super easy, low fat cheesecake makes for a terrific dessert that takes just minutes to prepare. One that the entire family will enjoy.

Serves 8

300g reduced fat untoasted muesli
50g low fat margarine
200g low fat ricotta
500g low fat Yoghurt
85g diet jelly lemon flavour
½ cup boiling water
1 cup diced mango
1 cup passionfruit pulp

Combine muesli and margarine in a bowl and mix. Press into the base and ¾ the way up the sides of a 20cm spring form pan and fridge whilst preparing the filling

Whisk ricotta and yoghurt until smooth. Dissolve jelly in boiling water and gradually pour into the yoghurt mixture and whisk until all combined. Pour into the chilled base and allow to set

Top with mango and passionfruit pulp
