Creamy Rice

This is a terrific low fat alternative to traditional creamy rice makes for a healthy dessert. Lovely served warm or cold.

Serves 4


  • ½ cup uncooked rice
  • ¾ cup water
  • 1 ¼ cups skim milk
  • 2 tablespoons sultanas
  • ¼ teaspoon vanilla essence
  • 1 tablespoon sugar


  1. Wash rice and place in saucepan. Cover with water and simmer over low heat until water is absorbed
  2. Add ¾ cup milk and simmer again until absorbed stirring whilst cooking
  3. Add the remaining milk and cook again until milk absorbed
  4. Stir in sultanas, nutmeg, vanilla and sugar
  5. Serve warm with sliced fresh strawberries
