Flourless Christmas Puddings

These super easy flourless puddings would make a terrific low fat alternative to Christmas pudding. Serve warm with a dollop of brandy custard on Christmas day or enjoy as a snack for morning tea or afternoon tea.


  • ¾ cup low fat milk
  • 2 teaspoons bicarb soda
  • 2 cups white breadcrumbs
  • 2 cups mixed dried fruit
  • 2 bananas, mashed


  1. Combine the milk with the bicarb soda.
  2. Grease a 6 cup capacity dish
  3. Place all ingredients into the dish and cover with foil. Place the dish into a large saucepan and pour enough water into the saucepan to come half way up the side of the dish.
  4. Bring to the boil, reduce heat and simmer for 2 hours
