One Pot Chinese Stir Fry Zucchini Rice
Recipes > Carb Free MealsUnlike other low carb rice meals this one does not use cauliflower but rather it uses zucchini noodles to produce a rice effect and it works super well. This dish is super low calorie and would make a terrific accompaniment to a protein for a filling meal
Serves 6
Ingredients:
- 4 zucchini spiralised or one pkt of zucchini noodles
- 1 tablespoon oil
- 1 teaspoon sesame oil
- 2 carrots finely diced
- 2 brown onions finely diced
- 2 teaspoons ginger minced
- 1 teaspoon garlic minced
- 2 teaspoons chilli paste, optional
- 1 teaspoon Chinese 5 spice powder
- 1 red capsicum finely diced
- 1 cup greens finely diced
- 2 tablespoons soy sauce
- Black pepper to taste
Method
- Peel, trim and spiralise your zucchini. Chop the zucchini noodles until it resembles long grain rice. Let drain on a few sheets of paper towel.
- In a frying pan or wok, heat the olive oil. Add the onions, carrots, garlic, ginger, chilli (if using), 5 spice powder, capsicum and green beans. Cook until nice and brown and caramelised, approximately 15 minutes
