Curried Beef Loaf

This one pot, low carb, easy dish is lovely served with a side of veggies for dinner then just as nice cold served with a salad for lunch. A super easy dish the entire family will enjoy.

INGREDIENTS

  • 700g lean beef mince
  • 1 ½ cups cooked zucchini or cooked cauliflower rice
  • ½ cup onion, chopped
  • 2 small eggs, beaten
  • 2 tablespoons raisins
  • 6 teaspoons Masterfoods Indian Cuisine Essentials or similar
  • ¼ cup corn relish

METHOD

  • Preheat oven to 180°C. Lightly spray a loaf tin
  • Combine the meat, zucchini noodles or cauliflower rice, onion, eggs, raisins and Cuisine Essentials until mixed and place into loaf tin.
  • Cook for 30 to 40 minutes.
  • Spread relish on top and cook for a further 5 to 10 minutes
