Carrot Soup
Recipes > Carb Free MealsThis is a very low calorie soup. Great to keep on hand for a filling drink between meals and snacks otherwise team up with a vegetable muffin for a super healthy morning or afternoon snack.
Ingredients
- 1kg carrots
- 1000 ml water or stock. I use chicken stock. Use vegetable stock for a vegetarian dish
- ½ tablespoon low fat margarine
Method
- Grate the carrots. In a saucepan melt the margarine and then add the grated carrots and simmer for 20 minutes with the lid on stirring occasionally.
- Add the water/stock and simmer for another 20 minutes.
- Process in a blender and serve. Add more water/stock if too thick
