Beef and Pumpkin Stew
Recipes > Carb Free MealsThis low carb, low fat stew is a complete meal that the entire family will enjoy. To make it even more filling serve it on zucchini noodles or konjac noodles or serve with a side of salad or vegetables.
Ingredients
- 400g lean beef diced
- 1 onion, diced
- 400g pumpkin, peeled and diced
- 4 carrots peeled and diced
- 2 stalks celery, diced
- 1 swede peeled and diced
- 2 tablespoons dry mustard powder
- 1 tsp white pepper
- 3 cups beef stock
- 2 tablespoons chopped parsley
- ΒΌ cabbage diced
Method
- Heat a saucepan and spray with oil spray. Cook the onion for 2 minutes. Add the beef and cook for 5 minutes until brown
- Add remaining ingredients except parsley and cabbage. Bring to the boil, reduce heat and simmer for 35 minutes until pumpkin is tender. Add more liquid if needed.
- Add parsley and cabbage and cook for 5 minutes until cabbage is wilted
