Vegetable Ratatouille

This super quick, low carb, low fat, low calorie dish would make a terrific lunch mixed with a tin of fish or a super nice accompaniment to a steak or chicken or fish for dinner.

Serves 2

Ingredients

  • 1 teaspoon oil
  • 1 garlic clove crushed
  • Half an onion
  • Half a capsicum diced or sliced
  • 2 mushrooms diced or sliced
  • Half a zucchini diced or sliced
  • 1 eggplant diced or sliced
  • 1 cup passata
  • ΒΌ cup fresh basil
  • 1 tablespoon tomato paste

Method

  1. Mix together the passata and tomato paste
  2. Fry the vegetables in the oil until soft - just a few minutes.
  3. Pour passata mix over the vegetables and simmer for a further few minutes
  4. Add the basil and serve
