Tuna Potato Pie

This dish is surprisingly low in carbohydrates despite the potatoes and kidney beans. At just 25g of carbs per serve this dish can be enjoyed for lunch or dinner. It is a complete meal in itself however for an even more filling meal add a side of salad or vegetables.

Serves 6

Ingredients

  • 600g low GI potatoes or sweet potato, boiled and mashed
  • 400g can tuna or salmon, drained
  • 1 ½ cups of leftover vegetables, chopped
  • 2 tablespoons chilli sauce
  • 2 green onions, finely chopped
  • 400g can red kidney beans, cannelloni beans or 4 bean mix
  • ½ tsp dried mixed herbs

Method

  1. Place mashed potato into a large bowl and add the remaining ingredients and mix well.
  2. Spray a large fry pan with oil and heat for a few minutes and then add the potato mixture, cover evenly and press down lightly and cook over medium heat for 7 – 8 minutes
  3. Turn over [slide onto a plate and flip back into pan and cook for a further 4 – 5 minutes.
  4. Serve cut in wedges
