Salmon Bake

This one pot dish is super easy to make and a lovely, filling dish for either lunch or dinner. Serve with salad or veggies.

Serves 4

Ingredients

  • 2 medium potatoes, grated and excess moisture drained
  • 1 large carrot, grated
  • 1 medium zucchini, grated and excess moisture drained
  • Green part of 5 spring onions, diced or a tablespoon of chives
  • 2 Tablespoons of lemon juice
  • 3 eggs, lightly whisked
  • 400g can salmon, drained


Method

  • Pre-heat oven to 180° degrees and line a square cake tin with baking paper.
  • Combine all ingredients thoroughly and transfer to prepared cake tin.
  • Bake for 25 to 30 minutes.
