Green Chicken and Vegetable Curry

This super delicious, quick, easy, low fat, low calorie and low carb meal is ready in just minutes and one that the whole family will enjoy. Serve on a bed of cauliflower rice or zucchini noodles or konjac noodles for a very filling meal.

Serves 4


  • 500g chicken fillets
  • 3 teaspoons green curry paste
  • ¼ cup water
  • 1 ½ cups pumpkin
  • 1 ¼ cups green beans
  • 1 cup Carnation Light & Creamy Evaporated Milk
  • 2 teaspoons cornflour


  • Heat pan, add chicken and cook until golden.
  • Add green curry paste and toss until chicken is coated.
  • Add water and pumpkin, cover, and cook for 5 minutes.
  • Add beans and cook for a further 5 minutes.
  • Combine the CARNATION Light & Creamy Evaporated Milk with the cornflour and add to the dish, bring to the boil stirring, reduce heat, and simmer uncovered for 5 minutes.
