Easy Quiche

This super easy, low fat, healthy quiche makes for a terrific dinner served with a side of veggies or just as nice cold for lunch the next day served with a salad.


  • 4 eggs
  • 1 ½ cups of low fat milk
  • ¾ cup self raising flour
  • 3 rashers of bacon (I use ham)
  • ½ cup low fat grated cheese
  • 1 medium chopped onion
  • 1/3 cup of low fat margarine, melted

Optional extras

  • Chopped capsicum
  • Sliced tomato
  • Fresh or dried herbs


  • Mix together the eggs and milk
  • In a large bowl mix the flour, butter, onion and bacon. Add the egg and milk mixture and mix thoroughly. Add the capsicum and herbs here also and mix.
  • Pour into a large quiche dish and arrange the sliced tomatoes on top.
  • Bake in an oven at 200° Celsius for 35-45 mins (depending on your oven temp). Quiche should be set and nicely browned on top.
