Chicken and Vegetable Laksa Soup

This is such a tasty dish. It is low carb, low fat and low calorie and would make a terrific lunch or dinner. This is one dish the entire family will enjoy.

Serves 6

Ingredients

  • 500g chicken breast fillets
  • 1 teaspoon oil
  • 1 red onion
  • 2 teaspoons lemongrass
  • 1 teaspoon fresh red chilli
  • 1 teaspoon mince ginger
  • Half teaspoon ground turmeric
  • 1 tablespoon chicken stock powder [I use Maggi]
  • 1 litre water
  • 1 packet zucchini noodles or Konjac noodles
  • 1 bunch broccolini
  • 1 red capsicum
  • 1 carrot
  • 375ml carnation light and creamy coconut evaporated milk
  • 1 teaspoons fish sauce

Method

  • Spray a large saucepan with oil, add the onion and cook over low heat for 3 minutes, until soft.
  • Add the lemon grass, chilli, ginger and turmeric, and cook stirring for 30 seconds.
  • Add the Chicken Stock Powder and water and bring to the boil.
  • Add the chicken and vegetables then simmer uncovered for 5 minutes, until vegetables are just tender and chicken is cooked through. Add the zucchini noodles [if using konjac noodles rinse first]
  • Stir in Nestle CARNATION Light & Creamy Coconut Flavoured Evaporated Milk and heat through.
  • Stir in MAGGI Fish Sauce and serve immediately
