This super hearty, low fat soup is a meal in itself ready in literally minutes. This makes quite a few serves so you will have plenty on hand for left over lunches.

820g can tomato soup
1 cup short pasta such as macaroni or mini penne
250g frozen mixed vegetables
400g can red kidney beans or 4 bean mix [or other beans]

Empty soup into a saucepan and add 1 ½ cans of water. Bring to the boil, add the pasta and cook for 8 minutes, stir occasionally. Add more water if the soup gets too thick.

Add the vegetables and beans, return to the boil and cook for 3 minutes until heated through. Serve
