Zucchini Noodle Carbonara Recipe

Serves 1

Ingredients

  • 4 large zucchini or 1 pkt zucchini noodles
  • ½ teaspoon salt
  • One egg yolk
  • One whole egg
  • 1 tablespoon parmesan cheese
  • 3 slices ham
  • ½ teaspoon pepper

Method

  • Spiralise the zucchini, lay on paper towel, sprinkle with salt and let sit for 5 minutes then squeeze out excess liquid
  • Whisk egg with egg yolk with the cheese. Heat over medium heat and cook ham until crisp. Add zucchini noodles and stir until warmed through. Turn off heat and stir noodles until eggs are just cooked.
  • Season with black pepper
