Quick, One Pot Vegetable Bake

This low carb, low fat, healthy dish is my go to lunch when I arrive home from work starving and need something super quick. Serve with a side salad or serve of vegetables for a main meal or add a tin of fish to the bake for a complete meal.

Ingredients

  • 1 – 2 cups of frozen veggies
  • ¼ cup Coles Light Mozzarella
  • 2 eggs beaten
  • ¼ cup skim milk
  • 1 tablespoon flour

Method

  • Combine all vegies in a bowl. Mix remaining ingredients and pour over vegies.
  • Bake 30 minutes at 180°C
