Ham & Veg Frittata

This super easy, low carb frittata takes just minutes to make and is a terrific side to a protein such as a steak or chicken or fish. Just as nice cold the next day for lunch

Serves 4

INGREDIENTS

  • 1 teaspoon oil
  • 1 leek chopped
  • 1 large carrot coarsely grated
  • 1 large Zucchini coarsely grated
  • 120g ham or chicken chopped
  • 4 eggs
  • 5 egg whites
  • 1 cup skim milk
  • 80g low fat cheese

METHOD

  1. Preheat oven to 180ÂșC fan forced.
  2. Combine oil and leek in fry pan and cook for 2 minutes. Add carrot and zucchini and cook for a further 2 minutes until tender. Stir in the ham and then spread the mixture over base of tin
  3. Whisk eggs and egg whites and milk in a bowl and pour over veggies. Sprinkle with cheese. Bake for 30 minutes or until mixture has set.
