Beef Curry

This low carb curry is a complete meal that the entire family will enjoy. For an even more filling meal serve on zucchini noodles or cauliflower rice. Just as lovely cold the next day for lunch.

Ingredients

  • Oil Spray
  • 1 teaspoon curry powder
  • 1 tablespoon flour
  • 1 apple, peeled and chopped into small pieces
  • 1 cup water
  • 1 to 2 tablespoons chutney
  • 3 tablespoons sultanas
  • 1 onion, peeled and finely chopped
  • 500g blade or chuck steak cut into cubes

Method

  1. Spray pan with oil spray, add onion and curry powder and cook for 3 minutes
  2. Add the beef cubes and turn until brown
  3. Stir in the flour, cook for 1-2 minutes
  4. Add the apple, water and chutney. Cover and simmer for at least 60 minutes to tenderise beef
  5. Add sultanas to beef mix and simmer for 5 minutes
  6. Serve of cauliflower rice or Slendier Noodles
