Beef and Pumpkin Stew

This low carb, low fat stew is a complete meal that the entire family will enjoy. To make it even more filling serve it on zucchini noodles or konjac noodles or serve with a side of salad or vegetables.


  • 400g lean beef diced
  • 1 onion, diced
  • 400g pumpkin, peeled and diced
  • 4 carrots peeled and diced
  • 2 stalks celery, diced
  • 1 swede peeled and diced
  • 2 tablespoons dry mustard powder
  • 1 tsp white pepper
  • 3 cups beef stock
  • 2 tablespoons chopped parsley
  • ΒΌ cabbage diced


  • Heat a saucepan and spray with oil spray. Cook the onion for 2 minutes. Add the beef and cook for 5 minutes until brown
  • Add remaining ingredients except parsley and cabbage. Bring to the boil, reduce heat and simmer for 35 minutes until pumpkin is tender. Add more liquid if needed.
  • Add parsley and cabbage and cook for 5 minutes until cabbage is wilted
